Gluten free bread pizza recipe! It's thin, crispy and you'd never realize it was gf EVER. it is also low FODMAP and vegan/dairy free too.
Ingredients
For the bread
- 260g yoghurt (I use plain coconut yoghurt, but any plain yoghurt would work)
- 250g gluten free self raising flour
- 1/4 tsp xanthan gum (optional)
- 1/2 tsp gluten free leaven (optional)
- 1/2 tsp salt
Garlic Topping Option 1: Low FODMAP option
- 3 tbsp garlic-infused oil
- 60g butter (dairy free if necessary), room temp
- 2 tbsp fresh parsley , finely chopped
- salt and pepper
Garlic Topping Option 2: If you'll eat garlic
- 2 tsp minced garlic paste (I buy this during a jar next to the spices)
- 120g butter (dairy free if necessary), room temp
- 2 tbsp fresh parsley , finely chopped
- salt and pepper
Instructions
- Preheat your oven to 200C Fan / 220C.
- Mix together your garlic topping during a bowl - option 1 if you'll not tolerate garlic and option 2 if you can tolerate garlic. Mix it together so it's nicely combined and put to at least one side for later.
- Add all of your bread ingredients into a bowl and blend together. I initially just do that with a spatula then because it starts to return together i exploit my hands to make sure it's all pushed into an enormous ball.
- Knead the dough briefly so it's smooth and combined (you might need a touch flour if it is a bit sticky, it shouldn't be)
- Cut the dough into 4-5 pieces. (To be honest you'll cut it to whatever size you would like your bread to be!)
- On a lightly floured surface use a kitchen utensil to roll out your dough. I roll mine to only over 0.5cm thick but slightly thicker or thinner would be fine too. you'll do that in any shape you wish , i select to try to to mine during a round-ish shape.
- Heat up a frypan - no oil needed.
- Carefully lift up your rolled dough and place it within the heated frypan (I wish to use my cake lifter to lift the dough). Allow to cook on one side for a couple of minutes, you ought to start to ascertain some bragging .
- Once some golden browning has occurred, flip the bread and cook for slightly less time on the opposite side.
- Repeat steps 6-9 together with your other pieces of dough. If there's any flour in your frypan which may have burnt within the heat, confirm you wipe out the pan in between each bit of bread.
- Spread a number of your spread mixture onto your breads, the maximum amount as you would like - you'll also add some cheese if you would like cheesy bread .
- Place within the oven for about 5 minutes until heated through. If you're during a hurry you'll just spread the spread on the breads and not put them within the oven, but i feel it really helps the flavour and crispiness!
- Slice up and enjoy!
